Tortellini! Our first holiday in lockdown was Easter and since we wouldn’t be going down to Calabria to be with his family, we decided to challenge ourselves. Our first attempt at making tortellini by hand was a spectacular success; the ripieno (classic Bolognese) and dough came out perfectly and they were even cute as buttons. Handmade tortellini are not a quick bite; the ripieno and dough came together quickly, but it took us hours to fold all those little bad boys. The perfect pandemic project, and hands down one of the best things I ate in 2020.
